Cheddar, chive and smoked paprika 'Cockle bread' with Temptress' Guacamole & goats cheese. (shaped like traditional cockle bread).

Cockle Bread

Makes 16

250g - plain flour

2 tsp - baking powder

1/2 tsp - chilli powder

1 red chilli, deseeded and finely chopped

75g - butter, diced

125g - Cheddar, grated

175ml - buttermilk

1 tbsp milk

1 tsp - dried thyme

½ tsp - ground allspice

Put all the Cockle Bread ingredients EXCEPT the buttermilk into a food processor. Pulse until the mixture resembles breadcrumbs. Take out the mix and mix in the buttermilk to get a sticky dough. On a lightly floured surface, roll out the dough softly to 2cm thickness. Cut into squares (or use a round cutter) to make 16 pieces (reroll any left over dough and cut out).

For the Cockle Bread topping

For added naughtiness: Clone-a-vagina kit from bondara.co.uk to create a naughty mould with which to decorate the bread - in the 1500’s women would press the dough in between their legs to give the infamous shape and impressions, but you can use a more hygienic method!

100 grams - plain flour

Water - enough to make a dough

Cloned vagina mould

To make the topping dough, mix enough water with the flour to make a stiff dough. Let it rest for 15 minutes before rolling out ½ cm thickness. Using your personal vagina mould (or any mould you wish to use), press it into the dough to recreate the shape of the mould in the dough (you can also cut out 16 rounds of dough and press them individually over the mould to get a good shape) Do this 16 times. Using a cutter, cut out each moulded shape and stick it on top of each bread using beaten egg. Brush each bun with milk and bake at 200c for 15 minutes.

Temptress' Guacamole

4 Avocado

Thumb size piece of ginger, chopped finely

½ spoon - That Hungry Chef Mojo Risin chilli relish (preferably Red)

½ red onion - finely diced

2 drops - ylang ylang essential oil or absolute

1 tbsp -chopped coriander

1 - lemon, juice

Crumbled goats cheese and toasted sunflower seeds

To make the Guacamole, peel, deseed and mash the avocado and fold in the rest of the ingredients. To serve, cut each bun in half, horizontally, add some of the avocado and top with the crumbled goats cheese and toasted nuts garnish. You can also add slices of tomato and some salad if you like.

Background and history:
Cockle bread was a bread baked by English women in the Seventeenth Century which was supposed to act as a love charm. The dough was kneaded and pressed against the woman’s vulva and then baked. This bread was then given to the object of the baker’s affection.

Buttermilk fried Sheep’s testicles with lusty slaw and tiger’s cream

Buttermilk fried Sheep’s testicles

Lamb/Sheep testicles – 2-3 pairs

Ground pepper – 1 tsp

Ground clove – pinch

Ground cumin – 1 tsp

Ground coriander – 1/2 tsp

Salt – 1 tsp

Red chilli powder (mild) ½ tsp

Ginger paste – 1 tsp

Garlic paste – 1tsp

Chopped coriander – 1 tbsp

Vegetable oil – 2 tbsp

Buttermilk batter

Plain flour – 135 grams

Buttermilk - 245ml

Sugar – 1 tbsp

Baking powder – 1 tsp

Salt – 1tsp

Tiger’s Cream

Mayonnaise – 100g

That Hungry Chef Smokey Chilli Relish – 1 tsp

Lime juice and zest – 1 lime

Chopped coriander – 1 tbsp

Garlic paste – 1tsp

Lusty Slaw

1/4 red cabbage

1/2 cucumber

1 carrot

Handful – rocket leaves

2 tbsp – chopped mint

2 tbsp – chopped coriander

1 – lime, juice

1 tsp – salt

1/2 tsp – sugar

2 tbsp – mixed seeds, toasted

2 tbsp – Extra Virgin olive oil

1 tbsp – chopped ginger

For the testicles, simply remove any excess membrane and slice them into pieces a quarter of an inch thick. Mix the sliced testicles with the rest of the ingredients in that section and marinate for 30 minutes.

In the meantime, make the Tiger’s cream: simply blend all the ingredients and keep in a bowl to serve.

For the slaw, grate the red cabbage and carrot in a large bowl. Deseed the cucumber and grate that into the mix as well. Add the rest of the ingredients and mix well.

To cook the testicles, heat enough oil in a deep pan for frying. To make the batter, just blend all the ingredients and set aside. Toss the marinated pieces of testicle in some plain flour and dip them into the batter, making sure to coat them evenly all over. Carefully drop the pieces into the hot oil (be careful with your fingers!) and cook on medium flame until they’re golden brown all over and floating on top.

When all the testicles are cooked, start assembling the dish.

To serve, first put a couple spoons of the slaw on the plate, followed by 3-5 pieces of fried testicle. Drizzle the tiger’s cream over the top and get stuck in!

Background and history:
Sheep's testes have been eaten as delicacies all over the world for hundreds of years. It is full of testosterone and minerals, and as such — in combination with special spices — is claimed to be a strong aphrodisiac.

Chocolate Tart

9.5 inch tart dish

240g – Dark chocolate

140g – Butter

4 – Eggs

70g- Sugar

2 tsp – chilli flakes

1/2 tsp – salt

Ants & Pearldust

Toasted leaf cutter ants and pearl dust 1 bag of each will be plenty (http://www.edible-shop.com/)

225g – plain flour

110g – butter, diced

80g – sugar

1 – large egg

For the pasty (can be made in advance), pulse the flour, butter and sugar in a food processor until the mixture resembles breadcrumbs. Tip the mix out onto a clean work surface and mix in the egg till you have a dough. Wrap the dough in cling film and chill for 1 hour.

With a little flour on your work surface, roll the pastry out in a circle about 11 inches wide. Carefully press the pastry into the tart case and using a small ball of pastry, push the dough into the edges of the mould. Chill for another 15 minutes. Cut out a piece of greaseproof paper larger than the tart ring and press it gently into the tart case and top with baking beans.

Bake the tart case blind at 170c for 20-25 minutes, then remove the beans and paper and bake for another 10 minutes until the entire case is evenly golden. To make the chocolate mix, melt the chocolate and butter in a bowl set over a simmering pot of water. Whisk the eggs, sugar, salt and chilli on full speed in a mixer until the mix is light and fluffy. Carefully fold in the chocolate mix.

Increase the heat of the oven to 180c

When the tart case is baked and ready, pour the chocolate mix into the tart case and put into the oven for 8 minutes at 180c.

When the timer goes off, remove the tart from the oven and allow to cool down.

Unmould the tart from the dish when cool and decorate it with some ants and finish with a sprinkle of pearl dust.

Ginger-rose and lemon spritz with Spanish fly juice

Ginger cordial

Rose oil

Spanish fly juice

Mint tips to garnish

Make up the ginger cordial as per instructions, using the lemonade. For each glass, add a drop or 2 of rose oil and a drop of Spanish fly juice. Serve over ice with a sprig of mint

Background and history:
Cantharidin is a powerful irritant obtained from many blister beetles, and sometimes given the nickname "Spanish fly". Cantharidin is claimed to have aphrodisiac properties, as a result of its irritant effects upon the body's genitourinary tract.

As it passes through the body, cantharidin irritates the genitals resulting in increased blood flow that can mimic the engorgement that occurs with sexual excitement. For this reason, various preparations of desiccated Spanish flies have been used as some of the world's oldest alleged aphrodisiacs, with a reputation dating back to the early western Mediterranean classical civilizations.
